RECIPE FOR SCRAMBLED EGGS WITH TOMATOES AND PEPPERS

Whether for breakfast, lunch, or supper, a hearty scrambled egg on a slice of #bread always tastes good, and is perfect for everyone who doesn’t have enough time to cook.

Ingredients for servings
4 medium tomatoes
2 red pointed peppers
1 onion
2 tbsp. vegetable oil
200 g ewe’s cheese in brine
4 large eggs
Chopped parsley
Salt
Pepper

1. Blanch, peel, halve, seed, and cube the tomatoes. Wash, halve, seed, and cube the peppers. Peel and cube the onion. Wash, shake dry, and coarsely chop the parsley.
2. Drain the feta and cut into small cubes.
3. Heat the oil in a pan, add the onion, braise until glazed. Then add the pepper and tomatoes and cook for about 3-5 minutes. Whip the eggs in a bowl, add the cheese, and stir everything together. Add to the vegetables and cook/let sit for another 2-3 minutes with occasional stirring. Drizzle with parsley and serve.
